My boyfriend's nephew (one of our two roommates) does the majority of the cooking in the house and last night we had home made Charro Beans with bacon pieces in it...yum!

But boyfriend make something pretty cool the other night, a pizza ring. The one he made for him and our two roommates looked pretty cool and was easy to make with canned pizza dough that rolls out. Seasoned ground beef, pepperoni, and shredded cheese went on the inside with extra pepperoni and cheese on top.

Mine came out as a pizza ball instead of a ring because I have to eat gluten free (celiac disease) and it was my first time making the dough which turns out is more liquidy-like than it is dough like until baked but it still came out really good!

Today bf's older half brother (nephew's father) is coming over to cook us chicken and hang out...can't wait!

I'm a lover of sweets. Cake, cookies, ice cream, pie, anything else I may have missed. My dad just made a bunch of baklava. <3

I second the comment on jealousy I love baklava...I haven't seen a gluten free version though and I have no idea how to make it I wish someone I knew knew how to make it lol

Baklava, that's phyllo with nuts and honey, right? You could probably make the pastry with rice flour(that doesn't have gluten right?), though like any pastry it'd be hard work.

They sell gluten free filo/phyllo dough as well, if you aren't opposed to store-bought. You just have to find the right place for it.

Finding the right place is the tricky part I've been all over certain food markets around my new home but haven't found them gluten free yet.

week after next school is out for the holidays and boyfriend's brother's girlfriend is a hobby baker and wants to learn how to make gluten free cookies for me so I'm going over there to do some baking in 2 weeks...saw her kitchen last night and it was amazing! so much space!!!

I'll be hunting down dairy and soy free cookie recipes this year. I have at least one that works pretty well to start with.

Just for fun, because I like sharing recipes, here is a good cake recipe that is gluten-free and grain-free. It also could be dairy free if you figured out an alternative for the whipped cream filling. Honestly it's just held together by egg whites and prayers, but it makes a very fluffy, light cake. Mine cracked a little but turned out mostly ok.

OOOoooooo thank you so much! I don't like whip cream but I'm sure I can find an alternative (maybe home made chocolate mousse!, butter, egg whites, and chocolate). I'm liking the sounds of this...might have to make it for Christmas at mom's and see how it goes over ^_^

Also Zili I recommend looking up Minimalist Baker! She does all gluten free recipes, and nearly all have vegan alternatives as well. She makes some pretty great stuff ❤️

I have looked at her stuff before, just $ to get supplies sometimes :/ but I'm gonna be picking up a bunch of g.f. flour this weekend while gift shopping because I just love baking and I've got the holidays to do so :D the difference between living with the bf and living at home is that my family eats my g.f. sweets where as boyfriend is like 'nope' lol (more for me!)
